Hill Top Winery is one of the first wineries in Valley Center to receive official small winery designation, authorizing production of up to 50,000 cases per year. Owner Mike Schimpf is a 40+ year general contractor who converted the historic Hill Top Ranch into a premier Valley Center wine destination. Winemaker Nolan Schimpf brings a "let the land and grapes speak for themselves" philosophy to estate Cabernet Sauvignon, Merlot, Syrah, Chardonnay, Viognier, Zinfandel, and Cabernet Franc. Features French oak barrels from a family that has been making barrels from their own trees for five generations.
