About The Winery
Adobe Hill Winery is one of Fallbrook's newest tasting rooms, set on an 85-acre property on Vía Ranchitos in the hills above town. The vineyard was founded in 2016 around an adobe home built by a local architect from bricks molded out of earth from the nearby San Luis Rey River, and the winery opened to the public in November 2024. The owners chose Italian grape varieties for how well they handle Southern California's warm, dry climate.
What to expect: estate-grown wines made from grapes farmed with organic and regenerative practices, poured in an open, hilltop setting with sweeping views and big sunsets. Adobe Hill also hosts community evenings, including a stargazing night with telescopes that benefits the Fallbrook Land Conservancy's dark-sky work, so check the calendar before you go.
Nearby: Adobe Hill sits in north Fallbrook, a short drive from Monserate Winery and The Vineyard 1924. See our Fallbrook wine guide for the full area, or plan the day with the Wine Tasting Day Trip Builder.
